my take on potato and spinach cakes

I didnt invent these , got the basics  from here spinach cakes and then i added some extras

heres what you need

2 med potatos cooked and chopped
big handful of spinach, chopped
3tbs gluten free flour
3 small chopped mushrooms
2 beaten eggs
large red onion , chopped
half chopped green pepper
teaspoon minced garlic
salt and fresh ground pepper

combine all in a large bowl and spoon into a frying pan that has some sunflower in the base, cook for a few mins on both sides then transfer to baking sheet, Pop in hot oven, gas mark 7 for 15 mins......enjoy!

I made enough for two days and heated them from the fridge at gas 6 for 20 mins, turning twice to make sure they got brown

you could easly change up what you add to the mix, im going to add tuna next time to make it a complete meal but sweetcorn, tomatos, peas,nuts or pre-soaked beans all sound good

unexpectantly having to go gluten and dairy free

so ....due i think to the menopause ive had to change what i eat. Due to all sausages having wheat in them ive gone and chosen some minced pork to make some meat balls.So im going to share a recipe with you that tastes great hot or cold

large handful of chopped cooked spinach
1 red onion chopped
half a green pepper ,chopped
2 small mushroom,chopped
salt and lots of fresh ground black pepper
pack of minced pork

combine all the above in a large bowl and then use your hands to form medium or smalll sized  balls, and pop on to baking tray...into oven, gas 6 for 30 to 40 min, turning once or twice, eat hot or cold

Sadly i have lost my Rottie Rosie. Had her for 11 and a half years, and although i knew id have to make that one way trip to the vets, it wasnt any easier when it came down to it....miss her lots, glad i didnt come home to an empty house but my other two girls knew something was wrong, at least theystill  have each other for company....

Well...its been a while, kind of forgot to blog, so here i am....a year ago today we got Cassie from the dog and cat home, i knew she would be worth it and she is, she has helped my older 2 girls perk up and she is a joy to have around, goes everywhere at 100 miles an hour, drops heavy bone on your feet, sleeps atop of the sofa while looking out of the window for us to return,in a way, im glad her owners gave her up, if they hadnt we would have missed out on the fun she brings...so happy 1st anniversay in your forever home...and so im not leaving out my other two here they are

got these solar butterfly lights, hung them over the shed, they looked gret, then one night no light, only had them a week so i took them down and went into the garage to put them back in their box to go back to the shop with them.....they lit up in the garage, weird, so i lay them on the outside table and that night they lit up, so ive got them back on the shed and last night they lit up....dont know what was going on with them, maybe they were just on strike..
